Delicious Spring Rolls with homemade peanut sauce!
For this recipe, I used all fresh veggies available in my pantry. I can eat this everyday. I love how crunchy the cabbage and the other veggies.
Recipe:
4 kale leaves, divided into serving size
1 big carrot, julienne or shredded
1-2 English cucumber, julienne
1/3 of red cabbage, shredded
12 rice papers
Steps:
Prepare all the ingredients.
Dip the rice paper in a shallow plate with water.
Add and arrange the veggies, kale, carrots, cucumber and cabbage into the rice paper. Roll and seal the rice paper. Repeat steps until done. Serve with your favorite peanut sauce or sriracha sauce. Enjoy!

3 tbsp low sodium soy sauce
2 tbsp rice vinegar
2 tbsp honey
3 tbsp warm water
1 tbsp sriracha sauce
