3 cups shredded green cabbage (about 1/2 small head)
2 cups shredded carrots (about 2-3 large carrots)
1 cup shredded red cabbage (optional, for color)
1/2 cup chopped green onions (scallions)
1/2 cup chopped fresh cilantro
1/2 cup chopped roasted peanuts
For the Sweet & Savory Dressing:
1/3 cup (80g) creamy peanut butter
3 tablespoons (45ml) rice vinegar
3 tablespoons (45ml) water
2 tablespoons (30ml) low-sodium soy sauce or tamari
2 tablespoons (30ml) maple syrup or agave nectar
1 tablespoon (15ml) toasted sesame oil
1 clove garlic, minced
1/2 teaspoon grated fresh ginger
directions:
1. Prepare Slaw Base: In a large bowl, combine the shredded green cabbage, shredded carrots, optional shredded red cabbage, chopped green onions, and chopped cilantro.
2. Make the Dressing: In a medium bowl, whisk together the peanut butter, rice vinegar, water, soy sauce/tamari, maple syrup/agave, sesame oil, minced garlic, and grated ginger until smooth and creamy. If the dressing is too thick, whisk in another tablespoon of water.
3. Combine Dressing and Slaw: Pour the dressing over the cabbage and carrot mixture.
4. Toss Well: Toss everything together until the slaw is evenly coated with the dressing.
5. Add Peanuts: Stir in most of the chopped peanuts, reserving a small amount for garnish.
6. Chill (Optional): For best flavor, cover the bowl and refrigerate for at least 15-20 minutes before serving to allow the flavors to meld.
7. Garnish and Serve: Toss the slaw again gently before serving. Garnish with the remaining chopped peanuts.
