🍗 Lime & Ginger Chicken Skewers with Peanut Sauce 🍢🥜
🧄 Ingredients:
🍢 For the Chicken Skewers:
500g (1 lb) boneless, skinless chicken thighs or breasts, cut into bite-sized chunks
Wooden or metal skewers (if wooden, soak in water for 30 minutes)
🍋 For the Marinade:
2 tbsp lime juice (freshly squeezed)
1 tsp lime zest
1 tbsp fresh ginger, grated
2 garlic cloves, minced
2 tbsp soy sauce
1 tbsp honey or brown sugar
1 tbsp sesame oil or olive oil
Pinch of chili flakes (optional)
Salt & black pepper to taste
🥜 For the Creamy Peanut Sauce:
1/3 cup peanut butter (smooth or crunchy)
2 tbsp soy sauce
1 tbsp lime juice
1 tbsp honey or maple syrup
1 tsp grated ginger
1 garlic clove, minced
2–4 tbsp warm water (to thin the sauce to your desired consistency)
Optional: 1 tsp sriracha or chili paste for heat
🌿 For Garnish & Serving:
Chopped peanuts
Fresh cilantro or mint leaves
Lime wedges
Steamed jasmine rice or rice noodles
👨🍳 Instructions:
1. Marinate the Chicken:
In a bowl, mix all marinade ingredients.
Add chicken pieces, toss to coat, cover, and refrigerate for at least 30 minutes (or up to 4 hours).
2. Prepare the Peanut Sauce:
In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, ginger, and garlic.
Add warm water a little at a time until smooth and creamy.
Stir in sriracha if you want a spicy kick.
3. Skewer and Grill:
Thread marinated chicken onto skewers.
Grill or pan-sear over medium-high heat for 10–12 minutes, turning occasionally, until nicely charred and cooked through.
4. Serve:
Drizzle peanut sauce over skewers or serve it on the side as a dip.
Garnish with chopped peanuts, herbs, and lime wedges.
Pair with steamed rice or noodles for a full meal.
