🍢 For the Chicken Skewers:
500g (1 lb) boneless, skinless chicken thighs or breasts, cut into bite-sized chunks

Wooden or metal skewers (if wooden, soak in water for 30 minutes)

🍋 For the Marinade:
2 tbsp lime juice (freshly squeezed)

1 tsp lime zest

1 tbsp fresh ginger, grated

2 garlic cloves, minced

2 tbsp soy sauce

1 tbsp honey or brown sugar

1 tbsp sesame oil or olive oil

Pinch of chili flakes (optional)

Salt & black pepper to taste

🥜 For the Creamy Peanut Sauce:
1/3 cup peanut butter (smooth or crunchy)

2 tbsp soy sauce

1 tbsp lime juice

1 tbsp honey or maple syrup

1 tsp grated ginger

1 garlic clove, minced

2–4 tbsp warm water (to thin the sauce to your desired consistency)

Optional: 1 tsp sriracha or chili paste for heat

🌿 For Garnish & Serving:
Chopped peanuts

Fresh cilantro or mint leaves

Lime wedges

Steamed jasmine rice or rice noodles

👨‍🍳 Instructions:
1. Marinate the Chicken:
In a bowl, mix all marinade ingredients.

Add chicken pieces, toss to coat, cover, and refrigerate for at least 30 minutes (or up to 4 hours).
