Thai Shrimp Noodle Bowl with Peanut Dressing 🍤
Ingredients:
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Noodles:
8 ounces rice noodles or soba noodles
1/4 cup chopped red cabbage
1/4 cup chopped carrots
1/4 cup chopped cilantro
1/4 cup chopped green onions
For the Peanut Dressing:
1/4 cup peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 clove garlic, minced
1 tablespoon honey
1/4 teaspoon salt
1/8 teaspoon red pepper flakes (optional)
Instructions:
Cook the Noodles: Cook the noodles according to package directions. Drain and rinse with cold water.
Marinate the Shrimp: In a bowl, combine shrimp with olive oil, garlic powder, onion powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
Grill the Shrimp: Preheat grill to medium-high heat. Grill the shrimp for 2-3 minutes per side, or until cooked through.
Make the Peanut Dressing: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, garlic, honey, salt, and red pepper flakes (if using).
Assemble the Bowls: Divide the noodles among bowls. Top with grilled shrimp, red cabbage, carrots, cilantro, and green onions. Drizzle generously with the Peanut Dressing.
Tips:
You can use any type of noodles you like for this recipe.
For a spicier dressing, add more red pepper flakes to the Peanut Dressing.
Serve the bowls with your favorite side dishes, such as seaweed salad, pickled ginger, or edamame.
