Spicy Peanut Power Slaw: A Thai-Inspired Crunchy Delight 🔥🥜🥬

Ingredients:
4 cups (280g) shredded cabbage mix (green and red)
1 cup (120g) shredded carrots
1/2 red bell pepper, thinly sliced
1-2 jalapenos or 1 Thai chili, minced (adjust to spice preference)
1/2 cup (30g) fresh cilantro, chopped
1/4 cup (30g) scallions, sliced
1/3 cup (45g) chopped roasted peanuts
Spicy Peanut Dressing:
1/2 cup (128g) creamy peanut butter
1/4 cup (60ml) fresh lime juice
3 tablespoons (45ml) water (or more to thin)
3 tablespoons (45ml) tamari or soy sauce
2 tablespoons (30ml) maple syrup
1 tablespoon (15ml) rice vinegar
1-2 teaspoons Sriracha or chili garlic sauce (adjust to heat)
1 clove garlic, minced
1 teaspoon freshly grated ginger

Directions:
1. Prepare the Spicy Peanut Dressing: In a medium bowl, whisk together peanut butter, lime juice, water, tamari/soy sauce, maple syrup, rice vinegar, Sriracha/chili sauce, garlic, and ginger until smooth. Add more water if needed for desired slaw dressing consistency.
2. In a large bowl, combine the shredded cabbage mix, shredded carrots, sliced red bell pepper, minced jalapeno/chili, cilantro, and scallions.
3. Pour the spicy peanut dressing over the vegetable mixture and toss well to coat everything evenly.
4. Stir in most of the chopped peanuts, reserving some for garnish.
5. Let the slaw sit for about 10-15 minutes before serving to allow flavors to meld. Garnish with remaining peanuts.
