🍚 Sesame-Infused Jasmine Rice
• 1½ cups cooked jasmine rice
• 1 tsp sesame oil
• 2 tbsp chopped scallions (optional)
• Salt to taste



🥣 Creamy Peanut Garlic Satay Sauce
• ½ cup plain Greek yogurt
• 2 tbsp smooth peanut butter 🥜
• 1 clove garlic, minced 🧄
• 1 tbsp soy sauce
• 1 tbsp lime juice 🍋
• 1 tsp honey or brown sugar
• Salt & pepper to taste
Water (to thin if needed)



🔥 Instructions

1. Marinate the Chicken
• In a bowl, combine olive oil, garlic, sesame oil, soy sauce, brown sugar, salt, and pepper.
• Toss chicken strips in the marinade and let sit for at least 20 minutes.
• Thread chicken strips onto skewers if using.



2. Cook the Chicken Skewers
• Preheat a grill or grill pan over medium heat.
Grill chicken skewers for 4–5 minutes per side, or until cooked through and lightly charred.
• Set aside and keep warm.



3. Roast the Sesame Garlic Potatoes
• Preheat oven to 400°F (200°C).
• Toss diced potatoes with olive oil, sesame oil, garlic, sesame seeds, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until crispy and golden.



4. Prepare the Sesame-Infused Rice
• Stir sesame oil and scallions into warm cooked rice.

• In a small bowl, whisk together Greek yogurt, peanut butter, garlic, soy sauce, lime juice, honey or brown sugar, salt, and pepper.
• Add water a teaspoon at a time until the sauce is creamy and drizzleable.



6. Assemble the Plate
• Serve the chicken skewers alongside the sesame garlic potatoes and sesame rice.
• Drizzle generously with the creamy peanut garlic satay sauce.
Garnish with additional sesame seeds or scallions if desired.
