NO BAKE PEANUT BUTTER PUMPKIN PIE BALLS #fallflavors
1 cup quick oats
1/2 cup Rice Krispies, crushed
1/2 cup pumpkin puree
1/4 cup creamy peanut butter
1/4 cup honey
1 tsp. pumpkin pie spice or to taste
Chocolate Coating
1/2 cup milk, dark or white chocolate chips
1 Tbsp. shortening, melted
flakey sea salt, optional
In a food processor, pulse the oats until they become a coarse flour-like texture. move to a mixing bowl and combine with the
Rice Krispies
In a separate bowl combine the pumpkin puree, peanut butter, honey, pumpkin pie spice, and mix until well combined.
Add to the oat mixture and mix till a sticky dough forms.
Using a cookie dough scoop or spoon, scoop equal portions of the mixture and roll them into bite-sized balls.
If the mixture is too sticky, you can wet your hands slightly to make rolling easier.
Place the balls on a baking sheet lined with parchment paper.
Freeze them for 15 minutes
Add the chocolate chips and shortening to a microwave safe bowl and microwave in 30 second intervals until the chocolate has completely melted. Stirring until smooth
Coat each ball with the chocolate sauce, and place it back on the baking sheet.
If desired, sprinkle the tops with flakey sea salt
Return to the freezer to harder and set.
Once chilled, they are ready to enjoy!
Store any leftovers in an airtight container in the refrigerator.
