- ½ cup chopped red bell pepper (75 grams)
- ¼ cup chopped fresh cilantro
- ¼ cup chopped roasted peanuts

For the Crunchy Thai Peanut Dressing:
- ¼ cup peanut butter (smooth or crunchy)
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce or tamari
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- ½ teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons water (or more to thin)

directions:
1. In a large bowl, combine the shredded green cabbage, red cabbage, carrots, and red bell pepper.
2. In a small bowl or jar, whisk together the peanut butter, rice vinegar, soy sauce or tamari, honey or maple syrup, grated ginger, red pepper flakes, and water until smooth. Add more water if needed to reach your desired consistency.
