I always make these #vintagerecipe Peanut Butter Eggs for Easter. 🥚🐣 #easyrecipe My son has a serious dairy allergy, so the ingredients in the parentheses is the dairy substitution. You can also make these eggs with white chocolate chips.

Peanut Butter Easter Eggs
2 cups creamy peanut butter
¾ cup butter (no dairy margarine)
3 ½ cups confectioners' sugar
3 cups crispy rice cereal
12 ounce milk or white chocolate chips (Enjoy Life brand of dark chocolate chips )
2 tablespoons shortening
Combine peanut butter and butter in a mixing bowl until smooth; stir in confectioners' sugar and crisp rice cereal until a dough is formed. Refrigerate the mixture for about 1 hour to allow it to be easier to handle. Shape mixture into egg shapes and freeze for 20 minutes.

Melt chocolate chips and shortening in a double boiler over low heat until smooth; dip egg shapes into chocolate. Place on waxed paper and allow to cool completely.

*If you are decorating eggs with sprinkles, edible glitter, edible confetti, or edible sugar decoration do so when the egg is still wet. Then move to the Freezer to let it set for 15 minutes. Take eggs out and keep at room temperature.

If you are decorating eggs by piping royal icing on to them, then place eggs in freezer for 15 minutes, take them out and pipe on your decoration. Allow to set at room temperature.
