Lime & Ginger Chicken Skewers with Peanut Sauce 🍗🍢🥜

🛒 Ingredients
For the chicken skewers:

1.5 lbs (700g) boneless, skinless chicken thighs or breasts, cut into chunks

2 tbsp fresh lime juice

1 tbsp lime zest

2 tbsp soy sauce

1 tbsp sesame oil (or neutral oil)

1 tbsp honey or maple syrup

1 tbsp fresh ginger, grated

2 garlic cloves, minced

Salt & pepper, to taste

Skewers (soak if using wooden ones)

For the peanut sauce:

1/3 cup creamy peanut butter

1 tbsp soy sauce

1 tbsp lime juice

1 tsp grated ginger

1 tsp honey or brown sugar

1/4–1/3 cup warm water (to thin)

Optional: 1 tsp sriracha or chili flakes for a spicy kick

To serve:

Chopped peanuts

Fresh cilantro

Lime wedges

Jasmine rice or lettuce wraps

👩‍🍳 Instructions
Marinate the chicken:
In a bowl, whisk together lime juice, zest, soy sauce, sesame oil, honey, ginger, and garlic. Add chicken and toss to coat. Cover and marinate for at least 30 minutes (up to 4 hours for more flavor).

Make the peanut sauce:
In a small bowl, whisk together peanut butter, soy sauce, lime juice, ginger, honey, and enough warm water to reach a creamy, dippable consistency. Add spice if desired.

Grill the skewers:
Thread marinated chicken onto skewers. Grill over medium-high heat for 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.

Serve:
Transfer skewers to a platter, drizzle or serve with peanut sauce on the side. Garnish with chopped peanuts, fresh cilantro, and lime wedges. Serve with rice or lettuce cups.

💡 Tips & Twists
Add chunks of red pepper or pineapple to the skewers for extra color and sweetness.

For a vegetarian version, sub tofu or tempeh.

The peanut sauce also works beautifully as a noodle dressing!
