Tofu Pad Thai with Fresh Veggies 🥗🍋

Ingredients:
- 200g rice noodles
- 1 block firm tofu, cubed
- 3 tablespoons cornstarch
- 3 tablespoons vegetable oil
- 1 cup bean sprouts
- 1 carrot, julienned
- 3 green onions, sliced
- 1/4 cup chopped peanuts
- Lime wedges for garnish

Pad Thai Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons peanut butter
- 2 tablespoons tamarind paste
- 1 tablespoon maple syrup
- 1 teaspoon sriracha (optional)

Directions:
1. Cook rice noodles according to package instructions. Drain and set aside.
2. Coat tofu cubes in cornstarch. Heat oil in a skillet and fry tofu until golden and crispy. Remove and set aside.
3. In the same skillet, add the sauce ingredients and cook for 1-2 minutes until slightly thickened.
4. Toss noodles, bean sprouts, carrot, and green onions in the sauce until well coated.
5. Top with crispy tofu, chopped peanuts, and serve with lime wedges.
