ingredients:
4 cups (about 280g) shredded green cabbage
2 cups (about 120g) shredded carrots
2 green onions (about 20g), thinly sliced
1/4 cup (10g) chopped fresh cilantro (optional)
1/2 cup (60g) chopped roasted peanuts, for topping
For the Peanut Dressing:
1/4 cup (60g) creamy peanut butter
2 tablespoons soy sauce or tamari (gluten-free)
2 tablespoons rice vinegar or apple cider vinegar
1 tablespoon maple syrup or agave nectar
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 teaspoon sesame oil
Pinch of red pepper flakes (optional)
2-4 tablespoons warm water, to thin dressing

directions:
1. Prepare slaw base: In a large bowl, combine the shredded green cabbage and shredded carrots. Add the thinly sliced green onions and chopped fresh cilantro (if using).
2. Make the dressing: In a medium bowl, whisk together the creamy peanut butter, soy sauce or tamari, rice vinegar or apple cider vinegar, maple syrup or agave nectar, grated fresh ginger, minced garlic, sesame oil, and red pepper flakes (if using).
3. Adjust dressing consistency: Add warm water to the dressing, one tablespoon at a time, whisking until the dressing is smooth and pourable.
4. Dress the slaw: Pour the peanut dressing over the cabbage and carrot mixture.
5. Toss to combine: Toss the slaw gently until all the vegetables are evenly coated with the dressing.
6. Serve: Transfer the slaw to a serving bowl. Top with chopped roasted peanuts just before serving for extra crunch.
