Chocolate Peanut Butter Rice Krispies Roll
Ingredients:
- 4 cups Rice Krispies cereal
- 1 cup peanut butter (creamy or chunky)
- 1 cup semi-sweet chocolate chips
- 1/2 cup unsalted butter
- 1/4 cup honey
- 1 teaspoon vanilla extract
- Pinch of salt
Directions:
1. Line a 9x13 inch baking pan with parchment paper and set aside.
2. In a large microwave-safe bowl, combine the butter, peanut butter, and honey.
3. Microwave the mixture in 30-second intervals, stirring between each, until smooth and fully melted.
4. Stir in the vanilla extract and a pinch of salt.
5. Add the Rice Krispies cereal to the bowl and gently fold until the cereal is fully coated with the peanut butter mixture.
6. Transfer the mixture into the prepared baking pan and press it down evenly using a spatula or your hands.
7. In a small microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each, until smooth.
8. Pour the melted chocolate over the pressed Rice Krispies and spread evenly.
9. Refrigerate for at least 1 hour or until firm.
10. Once set, lift the mixture out of the pan using the parchment paper and roll it carefully into a log shape.
11. Slice into pieces and serve.
