Ingredients:

β’ 3 tbsp honey
β’ 2 tbsp soy sauce
β’ 1 tbsp olive oil
β’ 1 tbsp lime juice
β’ Salt & pepper, to taste
β’ For the Cucumber Avocado Salad:
β’ 1 cucumber, diced
β’ 1 avocado, diced
β’ 1/4 red onion, thinly sliced
β’ 1 tbsp olive oil
β’ 1 tbsp lime juice
β’ Salt & pepper, to taste
β’ Fresh cilantro, for garnish
β’ For the High-Protein Spicy Sauce:
β’ 1/2 cup Greek yogurt
β’ 2 tbsp peanut butter or almond butter
β’ 1 tbsp sriracha sauce (adjust to taste)
β’ 1 tbsp soy sauce
β’ 1 tsp sesame oil
β’ 1 tsp lime juice
β’ 1 tbsp water (to thin, if necessary)
β’ For the Bowl:
β’ 2 cups cooked rice (white, brown, or your choice)
β’ Lime wedges, for serving
Instructions:
1. Prepare the Honey Glazed Salmon:
β’ Preheat the oven to 400Β°F (200Β°C).
β’ In a small bowl, whisk together honey, soy sauce, olive oil, lime juice, salt, and pepper.
β’ Place the salmon fillets on a baking sheet lined with parchment paper and brush them with the honey glaze.
β’ Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
2. Make the Cucumber Avocado Salad:
β’ In a medium bowl, combine diced cucumber, avocado, and red onion.
β’ Drizzle with olive oil and lime juice, then season with salt and pepper.
β’ Toss gently to combine and garnish with fresh cilantro.
3. Prepare the High-Protein Spicy Sauce:
β’ In a small bowl, whisk together Greek yogurt, peanut butter (or almond butter), sriracha, soy sauce, sesame oil, lime juice, and water until smooth.
β’ Adjust the sauce to your preferred spice level by adding more sriracha if desired.
4. Assemble the Bowl:
β’ Start by placing a scoop of rice in each bowl.
β’ Add a portion of the honey-glazed salmon on top of the rice.
β’ Serve with the cucumber avocado salad on the side.
β’ Drizzle the high-protein spicy sauce over the salmon and rice.
