Thai Peanut Wraps
Ingredients:
4 large tortillas or wraps
1 cup cooked chicken, shredded (or tofu for a vegetarian option)
1/2 cup shredded carrots
1/2 cucumber, julienned
1/4 red bell pepper, julienned
1/4 cup chopped cilantro
1/4 cup chopped green onions
1/4 cup crushed peanuts
For the Peanut Sauce:
1/3 cup peanut butter
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 clove garlic, minced
1 teaspoon grated ginger
Water (to thin the sauce)
Instructions:
Prepare the Peanut Sauce:
In a small bowl, whisk together all ingredients for the peanut sauce until smooth. Add water, one tablespoon at a time, to achieve your desired consistency.
Assemble the Wraps:
Lay a tortilla flat on a clean surface. Spread a generous amount of peanut sauce in the center.
Add the Filling:
Top with shredded chicken or tofu, carrots, cucumber, red bell pepper, cilantro, and green onions.
Finish the Wraps:
Sprinkle crushed peanuts over the filling for added crunch. Fold in the sides of the tortilla and roll tightly to form a wrap.
Serve:
Repeat with the remaining tortillas. Slice each wrap in half and serve with extra peanut sauce for dipping.
